Linguini with Kosher Seafood, Tomatoes, Artichoke Hearts, Olives and Lemon
Here is a complete meal that you can do in less then 30 minutes. I hope you enjoy this as much as my family does.
1 lb. Linguini
¼ cup Extra Virgin Olive Oil
1 stick Butter
12 cloves Garlic, crushed and minced
2 lbs. Kosher Fish Fillets sliced into 2 inch slices.
3 Scallions thinly sliced
½ cup Kosher Sun dried Tomato Paste
1 cup Cherry Tomatoes halved
¼ cup fresh Parsley minced
Juice of 2 Lemons
Zest from 1 Lemon minced
½ cup whole Black Olives pitted
½ cup Artichoke Hearts
Salt and Red Pepper flakes to taste
Melt butter and add the olive oil in a heavy pot, add the garlic tomatoes, tomato paste, parsley, lemon zest and the fish and sauté for about 10 minutes. Add lemon juice, salt and pepper.
Add the cooked linguini and mix together in the pot cooking another 3 minutes more and toss. Add the black olives, artichoke hearts to the top in a large bowl. Serve with a salad and some fresh bread for a complete meal.
