Roast Chicken with Potatoes, Vegetables, Citrus and Cumin
Here is a complete meal to complete your Passover holiday. I usually triple the recipe and roast the chickens. You can grill the birds as well using indirect heat. This however, takes 6 hours of indirect grilling if you use three chickens. You will like this a lot.
1 (4-5 lb.) Kosher chicken, washed and patted dry
2 tbs. Vegetable Oil
1 tsp, Dijon Mustard
4 Oranges, washed and cut into quarters
Zest of one Orange, minced
Zest of one Lime, minced
Zest of one Lemon, minced
2 Limes, quartered
2 Lemons, quartered
1 cup Kosher Israeli White Wine
3 Carrots, peeled and chopped
2 Onions, quartered
3 stalks Celery, cleaned and chopped
6 Large Baking Potatoes, quartered
4 Tomatoes, halved
1 can Pineapple pieces in it’s natural juice with no sugar added
1 tbs. Garlic Powder
2 tbs. Ground Cumin
5 cloves Garlic, crushed and chopped
3 sprigs fresh Oregano
Salt and freshly Ground Black Pepper to taste
In a large bowl add the zest of orange, lemon and lime, two tablespoons of oil., garlic, mustard, juice on one orange, one lemon, one lime, wine, pineapple juice and season with salt, pepper, cumin, garlic powder and whisk together. Place the chicken in the bowl and massage the bird inside and out in the mixture. Cover an refrigerate for a minimum of three hours. I generally marinate the bird overnight. Because I usually have a large family gathering I do two or three birds at one time and double or triple the rest of the recipe.
Preheat the oven to 350 degrees F.
In a large baking pan add the chicken and allow the rest of the ingredients. Place at least two of the oranges, lemon and lime pieces inside the chicken. Arrange the potatoes and the vegetables around the chicken.
Roast until the chicken juices run clear when the leg is pieced near the joint, about 1 ½ -2 hours. .Remove from the oven allow the chicken to rest 10 minutes before carving. Serve with a salad and Matzo or fresh bread for a complete meal.
