Asparagus soup with rice
This is great for lunch. Serve with some warm fresh bread and a salad and you have a complete healthy meal..
Ingredients
1 tablespoon Extra Virgin Olive Oil
1 Onion, minced
4 cloves Garlic, minced
1/2 cup Long Grain Rice
1 LB fresh Asparagus trim the woody ends
4 cups Vegetable Broth
1 small Hot Pepper seeded and minced
Salt and freshly Ground Black Pepper to taste
1 tbs. Flour and a little cold water to thicken
Homemade croutons
Directions
In a medium sized sauce pan, sauté onion and garlic in 1 tablespoon of oil until the onion are translucent.
Add rice and brown for 2 minutes. Add asparagus, and sauté for 5 minutes, adding the broth slowly until you bring it to a boil. Salt and Pepper to taste. Cover and cook at a low temperature for 30-40 minutes, until rice has softened.
Add the flour with water that has been mixed well to the soup. This thickens the soup.
Top with croutons.
