Chicken Breast with Peaches, Mango and Basil

Here is a delicious meal that I think you will really enjoy.

Chicken Breast with Peaches, Mango and Basil

Ingredients

Chicken

4 Kosher Chicken Breasts sliced
1 cup Whole Wheat Flour seasoned with Chef Ceaser’s Cajun Spices
2 tbs. Vegetable Oil (Canola Oil works great for this.)
1 dash of Chef Ceaser’s Cajun Spices
Salt and freshly Ground Black Pepper to taste

Sauce

2 tbs. Pareve Margarine
1 can Peaches sliced
¾ cup Kosher Chicken Stock
½ cup Shallots chopped
Zest of 1 Lemon
Juice of 1 Lemon
1 ripe Mango skin removed, seed removed and chopped
½ cup Fresh Basil Leaves chopped
Salt and freshly Ground Black Pepper to taste
1 tbs. All Purpose Flour and a little cold water for a thickener. Whisk well.

Directions

Chicken

In a large bowl, massage a little oil onto the chicken breasts and add the spices to coat evenly. In a large plastic bag add the flour and then the chicken breasts. Coat evenly and shake off any excess flour.

In a large frying pan, sauté the breasts in oil. until done. Brown both sides evenly. Drain on a paper towels.

Sauce

Sauté the shallots until they become translucent, add the chicken stock, peaches Mango, Lemon Zest and Lemon Juice. Bring to a simmer and stir in Basil and Salt and Pepper to taste. Slowly add the thickener.

A special note. Whenever possible please purchase Kosher items that come from Israel especially those products that originate in Judea and the Shomron.

Over a bed of wild rice place the chicken and a tablespoon or two of the sauce. Serve with some warm bread. Vegetable and a salad for a complete meal..

Serve with Wild Rice.
