Dates Stuffed with Walnuts, Coconut, Raisins and Honey

This is a recipe that is really thousands of years old. I would not be surprised to learn that the Biblical Kings and their children eat this. If this was good enough for King David and his kids I think you might want to give this a try.

Dates Stuffed with Walnuts, Coconut, Raisins and Honey

Directions

2 lbs. Fresh Dates
½ cup Coconut, shredded (fresh or dried)
½ cup Walnuts ground
¼ cup Raisins
A little Honey (perhaps a teaspoon or two.)
¼ cup Confectionairs or Powdered Sugar

Directions

Wash the dates in warm water and rinse them in cold water. Spread them out in a single layer on a cloth and let them remain until they are entirely dry. Cut a slit in the side of each one with a knife and remove the seed.

In a food processor add the walnuts, raisins, coconut and honey and form a paste. Place some of the nut mixture in the cavity left by the seed and press the date together over it.

When all the dates have been stuffed, roll them in the powdered sugar and serve.
