Eggplant Sandwiches on Baguette with Feta Cheese

Here is a wonderful recipe that is really not original. I found this in a cookbook about the History of French Cooking. Roasted eggplant sandwiches have been around for at least two hundred years and I think you will agree that this will become one of your favorite sandwiches.

Eggplant Sandwiches on Baguette with Feta Cheese

Ingredients

1 Eggplant, halved and sliced
1 tbs. Extra Virgin Olive Oil
1 tbs. Garlic Powder
¼ cup Mayonnaise
2 cloves Garlic, crushed and minced
1 Baguette, cut into half
1 small Tomato, sliced
½ cup crumbled Kosher Feta Cheese
¼ cup fresh Basil, chopped
¼ cup Green Olives, pitted

Directions

Preheat your oven’s broiler. . Brush eggplant slices with olive oil. Sprinkle a little garlic powder on the eggplant slices. Place them on a baking pan. Place the pan about 6 inches from the heat source for 10 minutes, or until tender and toasted.

Split the Baguette lengthwise, and toast. In a cup or small bowl, stir together the mayonnaise and garlic. Spread this mixture on the toasted bread. Fill the rolls with eggplant slices, tomato, feta cheese, olives and basil leaves.

Serve with Chips and a cup of soup.
