Goat cheese and pear toasts
Goat Cheese and Pear Toasts
This is really my wife’s recipe. I like this one a whole lot. If you can find the time try this recipe. This can be used for lunch, dinner or if you cut the bread into smaller pieces as an appetizer.
Ingredients
1 Country Style Whole Wheat Bread, cut into thick slices
1 bunch of fresh Watercress
¼ cup Butter, softened
2 small ripe Pears
juice of ½ Lemon
1 cup Kosher Goat Cheese, crumbled
½ cub Walnuts, crushed
Salt and freshly Ground Black Pepper to taste
Directions
Preheat the oven to 400 degrees F.
Arrange the bread slices on a baking sheet.
Toast in the oven for 10 minutes, turning halfway through the cooking time. Leave to cool.
Strip the leaves from the watercress and chop finely, reserving a few whole leaves to garnish. Mix the chopped leaves together with the butter, and season with pepper.
Halve the pears and remove the cores. Slice the pears thinly. Put in a bowl and add the lemon juice.
Spread the watercress butter over the toast, then put 2 or 3 pear slices on top of each one with some goat cheese and top with walnuts.
Bake in the oven for about 15 minutes until the cheese is golden brown. Cut the toasts
into quarters for an appetizer, and serve on a large serving plate garnished with the reserved watercress leaves.
A special note. Whenever possible please purchase Kosher items that come from Israel especially those products that originate in Judea and the Shomron.
