Grilled Beef Tenderloin Roast with a Mushroom Cranberry Wine Sauce
I was going to save this recipe for Shabbat but this is so good and so special, and because I think I deserve this, I will make this for dinner tonight. I really hope you like this as much as I do.
Ingredients
1 tbs. Extra Virgin Olive Oil
2 lbs. Kosher Beef Tenderloin Roast
2 cloves Garlic crushed and minced
Kosher Salt and freshly Ground Black Pepper to taste
Sauce
1 tbs. Vegetable Oil (Canola Oil)
1 Onion, chopped
2 cups Mushrooms roughly chopped
2 cloves Garlic crushed and minced
1 tbs. fresh Basil chopped
¼ cup Soy Sauce
¼ cup Kosher Israeli Red Wine
Kosher Salt and freshly Ground Black Pepper to taste
1 tsp. Cornstarch to be used as a thickener
1 cup whole Cranberries
1 tsp. Zest of Orange finely minced
Juice of two Oranges
Directions
Preheat the grill.
Meat
In a large bowl or pan, massage the roast with a little olive oil. Add the garlic and finish with a little salt and pepper. Sear the surface of the roast directly on the fire and then move and continue to grill using indirect heat. Grill for about 20 minutes until the interior temperature reaches 140 degrees F.
Sauce
In a pot combine the cranberries, orange juice and zest of orange. Bring this mixture to a boil and allow the cranberries to open. Remove from the heat and set aside.
In a large pan sauté the onions and garlic in a little oil until the onions are translucent. Add the soy sauce and wine and bring to boil. Add the mushrooms and the basil. When the basil is tender add the cranberry orange mixture.. Bring this mixture to a boil and stir to combine. Add the cornstarch a little at a time to thicken.
Allow the Beef Tenderloin to rest for 10 minutes and carve into 1 ½ inch thick medallions. Plate, spoon a little of the sauce over the medallions of beef. Serve the remaining sauce as a separate sauce.
Serve with a vegetable, potato, a salad and some fresh bread for a complete meal.
