Kosher Crispy Chicken Wings with Buffalo Sauce

Here is really the main event on Super Bowl Sunday and my last offering for this game. You simply cannot have a Super Bowl party without chicken wings. So here you go. Have fun!

Kosher Crispy Chicken Wings with Buffalo Sauce

Ingredients

Buffalo Sauce

2 tbs. Pareve Margarine, melted
½ tsp. Cayenne Pepper
Salt and freshly Ground Black Pepper to taste
1 cup Hot Pepper Sauce
6 Green Onions thinly sliced for a garnish

Wings

5 pounds Kosher Chicken Wings, tips removed, drumettes and flats separated
2 tbs. Vegetable Oil
2 cups All Purpose Flour
1 tbs. Cayenne Pepper (Optional)
Salt and freshly Ground Black Pepper to taste

Directions

Buffalo Sauce

Whisk together the margarine, cayenne pepper salt and pepper and hot sauce in a medium bowl; let stand for 5 minutes. Let this cool completely; cover and chill. Rewarm before using.

Wings

Preheat the oven to 400 degrees F.

Rinse the chicken wings and allow to dry. Add the wings in a large bowl, add a little oil and massage the chicken in the oil. Season with cayenne pepper, salt and pepper and mix well to coat all the chicken wings. Add the flour and mix well to coat everything. Bake wings on a large pan until the skin is crispy, 45-50 minutes.

Reheat the sauce. In a large bowl add about half the wings and about half the buffalo sauce and mix well to coat. Repeat with the other half of the wings. Sprinkle on some green onion slices. Serve with some additional hot sauce.
