Leg Of Lamb With Lemon Sauce

Here is a meal for Shabbat.

Leg Of Lamb With Lemon Sauce

Ingredients

1 Kosher Leg of Lamb (about 7 lbs.)
Salted, all traces of any blood removed, washed 3 times, and allowed to dry.

14 cloves Garlic, crushed and minced
2 tbs. each dried Oregano
2 tbs. Dried Rosemary
1/4 cup Extra Virgin Olive Oil
1 cup Kosher Red Wine
Zest of one Lemon minced
Juice of 2 Lemons
Salt and freshly Ground Black Pepper to taste

Lemon Sauce

¼ cup Water
2 tbs. Granulated Sugar
¼ cup fresh Mint Leaves minced
Zest of one Lemon minced
Juice of 4 Lemons
A little Cornstarch as a thickener

Directions

The Lamb

Marinate the lamb.

Finely chop 8 cloves garlic and place in a glass large plastic bag large enough to hold the lamb. Stir in 4 teaspoons each of oregano and rosemary, 1/4 cup of oil, wine, zest and lemon juice. Place the lamb in marinade, turning to coat well on all sides; cover and refrigerate Overnight.

Crush remaining 6 cloves of garlic and stir together with remaining 2 teaspoons each oregano and rosemary. Remove lamb from marinade and pierce in several places with the tip of a sharp knife. Rub garlic mixture over lamb, pressing into incisions. Coat with remaining oil and sprinkle with salt and pepper. Place on a rack in a shallow roasting pan.

Roast, uncovered, in 375F oven for 1 hour and 45 minutes or until thermometer registers an internal temperature of 130F. Cover loosely with foil and let rest for 10 minutes before carving.

The Lemon Sauce

In small saucepan, bring water and sugar to a boil, stirring until sugar is dissolved. Remove from heat; stir in mint, lemon zest and lemon juice. Add a little cornstarch as a thickener. Cover and let stand for 30 minutes at room temperature before serving.

Add potatoes, a vegetable or two, a fresh salad, and perhaps a little fish.

Scrub the kids until they shine. Put on your best Sabbath clothing and get ready to renew your bond with the Creator. Say a Blessing and light a couple of candles. Bless the Wine, the Challah and your Children. Tonight is the Sabbath. It is your job to keep it as a special day. Keep it Holy! This is the HaShem’s Law and our great honor to Obey.

A special note. Whenever possible please purchase Kosher items that come from Israel especially those products that originate in Judea and the Shomron.

Americans PLEASE TELL Obama and Kerry to go away and let Israel deal with it’s own problems. Everything this mighty dual touches turns into a complete disaster. Obama go create another alibi and leave the rest of us alone!
