Portobello Mushroom Burgers

Here is a recipe for the ladies especially for the Superbowl. You really can’t expect your husbands to eat anything close to healthy on this day but there is no reason for you to not to do the right thing. This is nutritious and delicious and very low in fat.

Portobello Mushroom Burgers


4 Portobello Mushroom Caps
¼ cup Balsamic Vinegar
2 tbs. Extra Virgin Olive Oil
1 tsp. dried Basil
1 tsp. dried Oregano
2 cloves Garlic, crushed and minced
Salt and freshly Ground Black Pepper to taste
4 (1 ounce) slices Kosher Provolone Cheese (Optional)
1 Tomato sliced
Some Lettuce torn up for the sandwich.
4 freshly baked Rolls, cut in half. I like Kaiser or Onion Rolls but you can use anything that you like.


Preheat the grill..

Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes or so, turning twice.

Brush grate with oil. Place mushrooms on the grill, reserving marinade for basting. Grill for 5 to 8 minutes on each side, or until tender. Brush with marinade frequently. Top with cheese during the last 2 minutes of grilling.

Toast the hamburger rolls lightly on the grill. Add the mushroom cap, a tomato slice or two and some lettuce. Serve with a salad and a baked potato for a complete meal.
