Roasted New Potatoes with Mushrooms and Onions

You will love this. Serve this with a steak and your in heaven.

Roasted New Potatoes with Mushrooms and Onions

Ingredients

3 lbs. new Potatoes, some whole, some halved and some quartered
2 tbs. Extra Virgin Olive Oil, or more if needed
2 lbs. Fresh Mushrooms
2 Red Onions quartered
2 Carrots sliced into large pieces
2 tbs. Garlic Powder
3 tbs. Balsamic Vinegar
6 cloves Garlic, crushed and minced
6 cloves Garlic crushed paper removed
Salt and freshly Ground Black Pepper to taste

Directions

Preheat oven to 400 degrees F.

Place potatoes into a large roasting pan add the garlic and massage with two tablespoons olive oil. Sprinkle with garlic powder, salt and mix to coat potatoes with salt and olive oil. Add the carrots, onions and celery. And mix well. Roast in the oven for 40 minutes until the potatoes begin to brown. Add the mushrooms, vinegar and another tablespoon of oil. Mix well. Continue to roast for another 15 minutes or so and serve.
