Roasted Stuffed Kosher Chicken Breast with Salsa Verde
Here is a great recipe for Shabbat. I really hope you like this as much as we do.
Ingredients
4 Kosher Chicken Breasts cut lengthwise but not separated
1 tbs. Extra Virgin Olive Oil
!tbs. Garlic Powder
Salt and freshly Ground Black Pepper to taste
Some cooking twine
Salsa Verde
2 cups Mixed Herbs including Parsley, Mint, Dill, Scallion, Cilantro chopped
1 Hot Pepper seeded and minced (optional)
2 large cloves garlic (optional), crushed and minced
1 cup Mushrooms sliced
1 Red Bell Pepper diced
3 tbs. Extra Virgin Olive Oil
Juice of two Lemons
Zest of one Lemon minced
Salt and freshly Ground Black Pepper to taste
Directions
Salsa Verde
In a bowl, toss the herbs, pepper, garlic, mushrooms and oil. Add the juice of the lemons, lemon zest and salt and pepper to taste.
Stuffed Chicken Breasts
Preheat the oven to 350 degrees F.
Massage a little oil and garlic powder on the chicken. Add the herbs and roll up. Tie with the twine or use toothpicks to close the chicken and place onto a baking pan.
Bake untill the chicken has browned. Remove from the oven and remove the twine or toothpicks. Serve with some seasoned wild rice, a vegetable, a fresh salad and some fish. Add some fresh Challah and a glass of your favorite Israeli Wine, and you have a great meal for Shabbat. Don’t forget to light a couple of candles, scrub the kids until they shine, say a few blessings, and enjoy.
A special note. Whenever possible please purchase Kosher items that come from Israel especially those products that originate in Judea and the Shomron.
