Tomatoes Stuffed with Sausage and Basil in a Tomato Basil Sauce
Here is a terrific recipe that you are going to love. This takes a little work but this is so delicious. Try this!
Ingredients
8 Tomatoes,
1 (14 oz.) can Tomato Sauce
3 tbs. Extra Virgin Olive Oil
Pinch of Cayenne Pepper
2 tbs. Worcestershire Sauce
1 lb. Chef Ceaser’s Oven Baked Kosher Sausage (See the recipe in this Blog.)
4 cloves Garlic, crushed and minced
1 Hot Pepper, minced
1 Red Onion, diced
1 stalk Celery, diced
1 ½ cups fresh Basil, chopped and divided
½ cup Walnut Pieces
Salt and Freshly Ground Black Pepper to taste.
Directions
Preheat the oven to 400 degrees F.
Using a serrated knife, slice off the top quarter of each tomato and reserve the tops. Scoop out the pulp from inside each tomato and transfer it to a food processor. Add 2 tablespoons olive oil, basil and the cayenne to the food processor and process until smooth..
In a large skillet heat the remaining oil over medium-high heat. Add the pepper, onion, diced celery and garlic and sauté until the onions are translucent. Add the sausage and Worcestershire Sauce and continue to sauté until the sausage has browned. Add the contents of the food processor and continue to mix for about 2 minutes.
In a pot add the tomato sauce, ½ cup of chopped basil some garlic, and season with salt and pepper. Heat until the sauce thickens.
Pack the tomatoes with the sausage mixture so the stuffing is domed on top. Place the stuffed tomatoes in the baking dish. Pour a tablespoon or two of the sauce over the tomatoes.
Bake until the stuffing is golden, about 20 minutes. Cover each tomato with a tops and serve with some extra sauce. Serve with a fresh salad and some fresh bread for a complete meal.
