Baked Walleye with Vegetables Tomato Sauce
As a boy and then as a young man growing up in Illinois, we would on occasion travel to Upper Michigan in the Winter and fish for Walleye. We would cut a hole in the ice and sit in a wooden shack drinking hot cocoa all day hoping to get a nibble. On occasion someone in my family always caught a few Walleye which is one of the best tasting fish known to man.
Today rather then freezing out on the ice you can go to many stores and simply buy all you want. This recipe is worth a try.
Ingredients
1 lb. Walleye Fillets
1 Onion chopped
1 Green Bell Pepper chopped
3 stalks Celery chopped
1 tbs. dried Parsley flakes
½ tsp Garlic Powder
½ tsp. Pepper
Salt and freshly Ground Black Pepper to taste
1 cup Tomato Paste
1 cup of Water
Directions
In a saucepan, combine the vegetables and juice and bring to a boil. Reduce heat; simmer, uncovered, until vegetables are crisp-tender, stirring occasionally, about 5 minutes. Place fish on a greased baking pan. Pour vegetable mixture over the fish. Cover and bake at 350 degrees F. for 30 minutes or until fish flakes easily with a fork.
A special note. Whenever possible please purchase Kosher items that come from Israel especially those products that originate in Judea and the Shomron.
