Broccoli cheddar soup with crusty bread roll
This is a fantastic meal. This is great for lunch or for dinner. There are many great bakeries in the States as well as in Israel. If you ask them to make you some Crusty Italian Round Bread they will be happy to accommodate. Each roll is a little more then one third of a whole loaf of bread. So this recipe requires about two whole loaves of bread whose dough makes about three rolls. These are really large hamburger buns. So this recipe gets a lot simpler when you buy the rolls.
Ingredients
1 tbs. Extra Virgin Olive Oil
6 cups Vegetable Stock
2 lb. fresh Broccoli Florets
1 Red Onion, chopped
2 Bay leaves
6 tbs. Butter
6 tbs. All Purpose Flour
2 cups or Milk
3 cups Kosher Shredded Cheddar Cheese, divided
2 tbs. Garlic Powder
3 Scallions thinly sliced
Salt and freshly Ground Black Pepper to taste
6 large bakery fresh Crusty Rolls (Round) (I have also provided a bread recipe for this dish.)
Directions
Preheat the oven to 300 Degrees F.
In a large pot bring the stock, broccoli, chopped onion, and bay leaves to a boil. Reduce heat to a simmer, cover, and simmer for about 10 to 15 minutes, until vegetables are very tender.
In a large pot melt the butter and whisk in the flour until smooth and continue cooking to make a very light brown roux (almost white). Add the milk and whisking until thickened. Do not boil the milk.
Using a blender, process the cooked broccoli mixture in 2 or 3 batches; add to the thickened milk mixture. Stir in about 2 cups of the cheese. Season with salt and pepper.
Carefully cut a round hole on the tops of the crusty rolls. Do not cut all the way through the rolls. The rolls will be used as the soup bowl. Scoop out the bread and place on a baking pan to make garlic croutons. Add a little olive oil and some garlic powder, mix and toast in the oven. Add the rolls to a baking pan and toast. Set aside. The rolls need to be lightly toasted to hold the soup.
Place one roll into a bowl and ladle some soup into the Crusty Roll. Garnish with garlic croutons and scallions. Top with some additional Cheddar Cheese and place the tops back on the Crusty roll. Serve with a fresh salad. With this recipe you can be an Iron Chef. Enjoy!
