Chicken with Sweet Potato, Cilantro and Bean Sprouts

Here is something that is really different. This a take off from an Asian recipe that I discovered when in Hong Kong may years ago. I really loved it then and I am sure you will love this now.

Chicken with Sweet Potato, Cilantro and Bean Sprouts

Ingredients

Chicken Stock

3 tbs. Vegetable Oil
2 Onions, diced
4 cloves Garlic, crushed and minced
2 inches fresh Ginger, peeled and thinly minced
1 tbs. Curry Paste (yellow, green, or red)
4 Sweet Potatoes peeled and cubed
4 cup Kosher Chicken Stock
6 Kosher Chicken Thighs,
3 or 4 Lime Leaves
1 19 oz. can of Diced Tomatoes
1 14 oz. can of Coconut Milk
Salt and freshly Ground Black Pepper to taste

Salad

1 lb. fresh Baby Spinach, cleaned and torn apart
4 large handfuls of Bean Sprouts
Zest of one Lime
Juice of one Lime
Juice of one Lemon
1 Red Bell Pepper, seeded and diced
1 Green Bell Pepper, seeded and diced
¼ cup Walnuts, crushed
2 Scallions, thinly sliced as a garnish
2 Oranges, peeled and sliced as a garnish
1 large bunch of fresh Cilantro, chopped as a garnish

Directions

Chicken Stock

In a skillet add a tbs. Of oil and sauté the potatoes until they begin to caramelize.

In a large pot over medium high heat, add the remaining oil, then sauté the onions, garlic, and ginger until the onions are translucent. Thoroughly stir in the curry paste. adding the sweet potatoes, chicken thighs, chicken stock, lime leaves, diced tomatoes, and coconut milk. Bring to a boil and then reduce the heat to a simmer. Cook, covered, for about 1 ½ hour or until the chicken is tender enough to fall away from the bones. Remove the bones, and season with salt and pepper. Remove from the heat.

Salad

Divide the spinach among 4 large bowls. Add the cilantro, bean sprouts, and lime zest, juice of the lemon and lime, peppers, walnuts and add the scallions and orange slices as a garnish. Ladle the chicken stock over the spinach and top with the cilantro bean sprout salad. Serve with some crusty bread for a complete meal.
