Sautéed garlic mushrooms
Sautéed Garlic Mushrooms
If you like mushrooms as much as I, here is a terrific side dish that is sure to please. I often add this to some French bread and a little Kosher Bleu Cheese and a slice of tomato for a terrific sandwich. Give this a try.
Ingredients
1 ½ lbs. Cremini Mushrooms, cleaned, about half whole, a quarter cut in half, and another quarter chopped
1 lb. White Mushrooms whole
6 cloves Garlic, crushed and minced
2 tbs. Extra Virgin Olive Oil
1 tbs. Butter
Kosher salt and a generous amount Cracked Black Pepper
6 Shallots, minced
2 Red onions sliced
2 shots Kosher Cognac or Brandy
2 tsp. fresh Chives, chopped
Directions
In a large skillet add the oil. Add the onions and garlic and sauté until the onions are translucent. Add the butter and the mushrooms to the pan.
Season with salt and pepper and add the shallots and the chives.
