Chef Ceaser’s Salad with Goat Cheese, Herb and Bean Dressing
Ladies, here is a healthy alternative to all the junk food your husbands will be eating while they watch the Super Bowl. There is no point talking to them about eating healthy. Tonight that’s a dead issue. But here is a recipe that I guarantee is delicious and will keep you skinny.
Salad greens including:
1 Head of Lettuce,
½ head Red Cabbage, thinly sliced
½ cup Parsley, chopped
¼ cup Fresh Dill, chopped
¼ Basel chopped
2 Carrots, sliced
2 Red Bell Peppers, chopped
½ cup whole Green Olives, pitted
1 cup Cherry Tomatoes the more the merrier
Add anything else your heart desires.
3 tbs. Extra Virgin Olive Oil
2 tbs. Balsamic Vinegar
½ tsp. Dijon Mustard (I sometimes use yellow or hot Russian mustard.)
4 cloves Garlic, crushed and minced
1 tsp Garlic Powder
½ tsp of prepared white Horseradish (optional)
½ tsp Honey
Salt and freshly Ground Black Pepper to taste
1 can White Garbonzo Beans in water, drained and rinsed
2 tbs. fresh Basil leaves, chopped
1 cup Kosher Goat Cheese
¼ cup Pecans
Clean, chop cut, slice, tear the vegetables for the salad into a large bowl.
In a separate bowl whisk together the oil, vinegar, mustard, and salt and pepper, to taste. Drizzle the dressing over the greens and toss. Sprinkle over the Salad the beans and Cherry Tomatoes and crumble the goat cheese and sprinkle with basil pecans and serve cold.
A special note. Whenever possible please purchase Kosher items that come from Israel especially those products that originate in Judea and the Shomron.
